In the last 20 years, the incidence of children obesity has increased very significantly in Spain and anywhere in the western world. The main causes of the infantile obesity increase should be look for, among other factors, in the changes of conduct regarding feeding, the substitution of some foods by others more calorics, the disarrange of the meals, the sedent, etc... They are changes that are affecting society in general and children in individual and are moving us away of the Mediterranean Diet.
The obesity is an alteration of metabolic nature, characterized by an excessive increase of the body’s fat. Infantile obesity is far away of being a merely aesthetic problem, since many diseases and upheavals can be derived from the same one.:
  • The first consequences can be psychological (low self-esteem, bad scholastic results, a change in the self-perception especially in the adolescence, introvert and social rejection, etc.)

  • The second consequences are more related to the risk of developing diseases that are shown in childhood or, usually, in the adult age (diseases like: increase of the arterial pressure, increase of the levels of cholesterol, respiratory upheavals when sleeping, diabetes, etc.)

Mediterranean Diet
During centuries, a culinary culture has been elaborated in the countries of the Mediterranean basin, which knows how to combine the best thing of this earth bathed by the sea and the sun. But, in fact, the Mediterranean Diet is something more than a combination of ingredients; it is intimately related to the style of Mediterranean life and culture. It is the expression of a climate, customs and geography unique in the world.
Mediterranean Diet is a philosophy of life based on:
  • A feeding way that combines traditional and renewed ingredients by means of the modern technologies

  • Recepes and ways to cook in the area

  • Culture and typical styles of Mediterranean life.

The combination of its elements provides a healthful well-being.
30 years ago approximately, the international scientific community showed that the countries of the Mediterranean basin: Spain, Italy, France, Greece and Portugal presented a smaller rate of heart attacks and mortality by cancer. Researches wanted to know the causes of this smaller incidence of the mentioned diseases and discovered that the main reason was in the diet. Since then the concept of Mediterranean Diet began to be forged.

At first the causes by which the Mediterranean Diet was so healthful were not known exactly. But little by little the discoveries in biochemistry and human nutrition revealed the secrets of a millenarian culture.

Nowadays, it is commonly accepted by the scientific community worldwide the nutritional values and the good effects on health that has the combination of the ingredients mostly used in the Mediterranean Diet: Olive oil, Pasta, Vegetables, Cereals, Fruits, Vegetables, Fish, Dairy products and a moderate use of wine and fresh and cured meats. Some of the main seasonings included in our nourishing culture are garlic, oregano and pepper. Mediterranean Diet is especially healthful when their ingredients are all combined.

Gallina Blanca, in its interest to promote the good use of healthful nutritional habits, is member of the Association for the Development of the Mediterranean Diet, whose main objectives are promoting knowledge, research and spreading of the Mediterranean Diet, integrating and coordinating initiatives related to it, and thus defending our patrimony and our gastronomical culture.
